The Best Sugar-Free Banana Muffins

I know it's so strange the day before Christmas to be writing about Banana Muffins but I popped by my mum's yesterday and she was making these delicious paleo banana muffins. They're honestly the best! So light, so fluffy and no sugar needed 😉 (although I did run these past my sweet-toothed man who said they could've used a little bit more sugar so if you fancy it add in some honey or coconut sugar but the banana sweetness was enough for me!) They're the perfect last minute snack as they take around 10 minutes to put together. 

 

YOU WILL NEED

4 Bananas - mashed

4 eggs

1/2 cup almond butter

2 Tbs melted coconut oil

1 tsp vanilla extract

1/2 cup coconut flour

2 tsp cinnamon

1/2 tsp nutmeg

1 tsp baking powder

1 tsp baking soda

pinch of salt

Add the ingredients in a bowl as listed in order and blend! Add to muffin cases and bake for 20 minutes at 180 celsius. So simple!
