Healthy Orange Cake

Baking doesn’t always have to involve a long list of ingredients and about a bajillion complicated steps. Today I’m sharing with you a super easy recipe for a healthy orange cake even baking newbies can whip up with their eyes closed. And don’t let the word healthy fool you! I can assure you, it’s just as delicious as any other cake of a more indulgent nature.

YOU WILL NEED:

2 oranges

1/2 cup honey

250g ground almonds

4 eggs

2 teaspoons baking soda

 

INGREDIENTS FOR THE OPTIONAL SYRUP:

1 orange

2 tablespoons honey

2 tablespoons rosemary

STEP 1: Boil oranges in a saucepan of water for 1 hour. 

STEP 2: Blend the whole oranges in a food processor. 

STEP 3: In the meantime, preheat your oven to 180°C. 

STEP 4: Beat the eggs and honey together. Then add baking soda and beat everything together again. Lastly, stir in orange puree and add ground almonds. 

STEP 5: Pour the mixture into a cake tin and bake for 30-45 minutes. 

STEP 6 (OPTIONAL): For the syrup, mix the juice of one orange, 2 tablespoons of honey and 2 tablespoons of rosemary. 

STEP 7: Enjoy!
